Chicken in Wine and Balsamic Vinegar

I'm trying to get back in the swing of things in my kitchen now. So I'm joining Michael for "Foodie Friday" at Designs by Gollum

Chicken in Wine and Balsamic Vinegar

I really don't have a written recipe for this because I make it a lot.
But I'll talk as I'm cooking here.
First I cut up some breasts of chicken into nice serving sizes and brown them in olive oil.
Then I add sliced onion and green pepper.


I sprinkle some brown sugar over the onions and peppers as they are cooking. (That's because I love brown sugar on practically everything!!) You can omit that part if you want.
I then add a splash of white wine and a splash of balsamic vinegar. Now let the veggies cook till tender.


Tonight I decided to make mashed potatoes since I haven't had real potatoes since my kitchen was torn apart and I really had a taste for them! I added a hunk of butter and a hunk of cream cheese. Mmmmmmmmmm.


I like them mashed pretty good but still have a few hunks so you know they're real!!


So here's the meal. Really tasty with some creamed corn. This would be good with rice too.

Finished Dining Room!

Hi all. I'm happy to announce that my dining room is finished. My contractor has left the building and I'm taking a break from renovations for awhile!! I am completely delighted with both my kitchen and my dining room. They are exactly what I wanted.

The dining room took about 2 1/2 weeks from tear out to finished! I'm so glad I had the dining room done too. I mean you can't have a spectacular kitchen then have your guests go into a unattractive dining room. And mine was sure that!! Old paneling, old drop tile ceiling that hung down and NO WOODWORK!! You can go back in the archives under "dining room" and see the process. My light is still tied up till I get a table so I don't keep bumping my head on it!
I think the room looks very colonial now!



I was going to do the room red (above the wainscoting) until a few days before painting time. Then I decided that red looked too formal and I would be too limited with that color.


I will have some black furniture to go in here and I love black with this wall color.

I don't know yet what furniture or where I will place it. I still don't have my dining room table. I am now going to seriously look for one in the next 2 weeks!


The china cupboard and carpet I'm not so sure about but they will have to do for now. Who knows, it may all fit in. It will all depend on the style of table I find.
I'm so happy this is all done.
Ray Klimko from Cottage Cabinets did both of my rooms. He did exactly as I wanted, he's very particular with his work and it is a pleasure to know him. I recommend him HIGHLY!!

Satire in the Spring, Video


This is one of our most favorite videos of our first Arab named Satire. It was taken in 2005 when he was 25 yrs old! He's 30 now and still going strong. Arabs are like that you know!

Horses love Spring


. . . Because they can be outside!!!
Satire is dozing in the warm sunshine. Awwwww Spring!


The past couple days have been beautiful and they are all outside waiting for the new grass to grow! Here's Preacher coming to see if I have cookies in my pocket. He's so handsome!


Echo is all muddy as the first thing he likes to do is find the wettest place and have a good roll! Today the pastures are drying out nicely though.
