Possibly the Most Luscious Soup I've Ever Made!!
Here are the ingredients plus one medium onion finely diced.
Oh yes, and 3 TBS Butter
Saute diced onion in butter till transparent (about 5 minutes) Do not brown.
Add 3 TBS flour and whisk.
Add 1 1/2 C Chicken broth and whisk.
Add 1 1/2 C Heavy Cream and whisk. Cook till it thickens a little.
I could feel my cholesterol count rising as I made this.
When hot, add 1 1/2 cups grated cheddar cheese.
I'm glad I'm on cholesterol medication!!
Rocky is waiting to lick the pot!
And if it isn't rich enough,!!!! you can add crumpled bacon and some chopped green onion.
Oh, go ahead, add the bacon on top, it's too late to worry now!
This is velvety smooth and so rich I'd serve it in small bowls!

I felt guilty after eating a good size bowl of this so I had some green tea! Does that count for something healthy!!
