Apple Pie Pockets

Cooking for One or Two?

Here is the perfect solution for getting your apple pie fix!

I get such a taste for apple pie sometimes.  Yes, I could just buy one but at this time of year, my apple tree puts out a lot of beautiful Jonathan apples.
All organic too since I don't spray my trees.  This was the best year ever!

Here's how I made these:
Preheat oven to 400 degrees.
I used a box of 2 Pillsbury ready made pie crusts to make things really simple!
(Take these out of the refrigerator while you are peeling your apples.)
2 Cups of fresh peeled and diced apples
1/3 cup sugar
1 TBSP flour
1 1/2 tsp. cinnamon
Combine the dry ingredients then add diced apples and coat.


Lay out first crust and cut in fourths
Put 1/3 cup apple mixture onto crust and fold over.  
Pinch edges to seal and poke top with a fork to let steam escape.
Continue this until 8 crust sections and all the apple mixture is used up.
Place on a cookie sheet.
Bake 15-20 minutes at 400 degrees.
(Mine were perfectly done at 18 minutes)





There you have it!
Easy and came out PERFECT!!

(The only thing I'll do different next time is to paint the tops with some melted butter to make them prettier!)
