A Quick Crockpot Rave

I found a great crockpot recipe and made it the other day.  It's one of the best chicken ones I've tried.
It doesn't even taste like it was made in a crockpot.  You know some of the recipes get to tasting the same.  Especially with chicken and if it involves canned soup.
This has soup in it but also sour cream and stuffing!
I'm telling you, it's delicious!  Go see: 

It starts out saying "There's nothing about this I don't like!"

The only thing I changed was instead of chicken breasts, I used chicken thighs which I think are better for this.  (more moist)

Crockpot Bread Pudding

Last evening I put together the ingredients for bread pudding in a crockpot.  It only cooks for about 3 hours so I could do it in the evening and refrigerate it.
The recipe is from allrecipes.com and I will have that at the end of the post.

I cubed up the bread I had on hand.  Some wheat and the last of my cinnamon raisin bread.  4 cups of bread goes into the crockpot first with some added raisins.
Then you mix up the rest of the ingredients and pour over the bread, tossing to coat.
That's it.  Easy peasy.
Now just cook on low for a little over 3 hours or until a knife inserted comes out clean.





It seemed a little dry last night when I put it away. BUT this morning I warmed up a dish with some milk over it (cream would be even better!) and it made a delicious breakfast!!!

Apple Butter By Accident

Well, here's how that happened!
I fully intended on making some crockpot apple sauce.
I got out my handy apple peeler and peeled a dozen apples from my own tree.
(I feel like such a homesteader!)



I put all the apples in my crockpot plus about 1/4 cup water and turned it on low.

I did stir it around a couple times during the day, but then I completely forgot about it!!
(Where is my brain?)

When I looked again, it wasn't apple sauce color.  It was apple butter color and it had been cooking about 11 hours!!!


I tasted it, added some sugar and cinnamon and then a little butter and brown sugar.
Then I blended it smooth with my hand held stick blender.
Aww, that's good!
 I spread it on some toast.  Very tasty!


I'm going to freeze those couple jars and name it "Accidental Apple Butter".
(And my mother thought I'd never be a cook!)

Best Pork Chops in a Crockpot!

These turned out to be the best tasting pork chops I've had in a long time!
And so easy.

Place 5-6 boneless pork chops in slow cooker.

In a bowl mix: 
1/4 cup brown sugar (packed)
1/2 Cup Soy Sauce
1 tsp ginger
1/4 cup catsup
2 cloves of garlic smashed
Salt and Pepper
Pour this over the chops and cook on low for 6-7 hours.

I served mine with rice but potatoes would be good too.



These smelled wonderful while cooking and this sauce is fantastic!!!!

BarBQ Steak in a Crock Pot

BarBQ Steak in the Crock Pot!

I had gotten this thick piece of sirloin tip steak on sale and had to do something with it.
My first thought lately is always the slow cooker!
So I plunked it in there on top of some cut up onions and poured some Hickory Smoke BarBQ sauce over it, turned it on low and left for the barn.


The house smelled wonderful when I returned home!


I made some delicious mashed potatoes whipped with butter, a little milk and a TBSP of plain yogurt. Yummmmm. I love potatoes no matter how you fix them!


An easy great meal!


Oh yes, Monk is waiting for me to get done. Rocky is on the other side of me but wouldn't hold still enough for a picture!

Apricot Pork Chops

This recipe is from Stephanie O'Dea's wonderful slow cooker cook book.
Everything I've made from this book has been wonderful!!

Here's the recipe.




8 hours on low and it's just about done and falling apart good.


I decided, since the table was set in the dining room, I'd eat in there tonight!


I can't express to you enough how delicious these were!! I mean I wanted to pick them up and eat them off the bone.


The sauce over the rice was heaven!!!!

Easy-Peezy Crockpot Roast

Crock Pot Roast

This is super easy!! And very tasty.
Empty the three packages seen below into about 1/2 Cup of water and mix up.



Pour over any beef roast cut.


Cook on low for 6-7 hours.


That's it!
I served it with cheesy mashed potatoes and canned peas.
Warning the gravy is very salty so don't salt any of the rest of the meal.
Besides that, it was really good.


And tender!!

Unplanned Crock Pot Chicken

I almost didn't have something for this week but as things worked out here I am with Debbie and the Crock Pot Gang.





My Unplanned Crock Pot Day

Maybe the worse thing to wake up to in the morning is to come downstairs for your breakfast and coffee and find that the chicken you had been defrosting in the refrigerator had leaked raw chicken juice all over your refrigerator!!
YUK!!!!!!!!
It took me a half hour to clean up and "sterilize" my refrigerator and everything the "juice" touched!! AND all this before my coffee. Not Good.
Well, the first thing I thought of was to rinse off the chicken and plop the 3 breasts in the crockpot. I didn't want to take the chance of another leaky plastic bag!
I put a sliced onion, some celery, rosemary and some chicken stock in, closed the lid and put it on high for 15 min. then switched it to low. It was just going to be in there till I came home from the barn.
Turned out if was done in about 6 hours.
I had one for supper and wrapped the rest to cut up and use for another recipe.
Gave the broth to Rocky over his dinner.
He was very happy!


Dinner with ME in the dining room.


I just made biscuits and had corn. It turned out to look very blaaah. (I should've had a green vegetable!) Well, I added some mild salsa over the chicken for color if nothing else!



Now onto desert. My favorite part of the meal!
Lemon cake with vanilla yogurt topping.


Doesn't that make your mouth water?

Cold Weather Pot Roast

Yippee, back to the crock pots!!!!!

Cold Weather Pot Roast
The weather is changing and fall always means pot roast or chili to me!!
So here's a really good tasting pot roast for you to try.
The recipe.




I put my rump roast in the pot and assembled everything else.



Followed the directions and put it all in there.



I let it cook on low for about 11 hours and here's the delicious looking results.



Dinner for me, in the dinning room. I had cold slaw as a side and mashed potatoes and green beans with sesame seeds.



My green beans were a little over cooked but still good.



It's hard to eat with the big black cat staring at you!!!



For desert, it was pound cake with raspberries and blueberries topped with a mixture of vanilla yogurt and a little milk.


Yummy!
