Cheesy Hash Brown Potato Casserole

This is a repeat from awhile back but I wanted to join the new food "party" at Cocina Diary.

Check it out:

Cheesy Hash Brown Potatoes

I bought a bag of these never frozen hash brown potatoes in the refrigerated section of the grocery store. This recipe (well close enough), was on the back.

Mix together:

The bag of hash browns (probably 2 cups if you do your own)
2 cups shredded cheddar cheese
1 can of Cr. of Chicken soup
1 cup of sour cream
1/4 cup of melted butter

Spray the inside of a 2 qt baking dish with Pam
Spread mixture into dish
Make a topping of crushed corn flakes and melted butter.
(I didn't have any corn flakes so I crushed up some croutons with the melted butter and it was good)

Bake at 350 degrees for 1 hour or until potatoes are tender.

Super Easy, Super Good!

I think the croutons made it even better!

All done.

Now . . . don't these look good!!!!! That's a turkey burger with the green beans.

  1. Love this recipe -- one of my favorites -- but I've never topped it with the crunchy -- I'll have to try that next time.

  2. Oh Yum! I have already saved this to try very soon! I have a bunch of potatoes that I need to use so I can just shred them up and make this! Thanks for sharing!

  5. Shirley, first of all, before I forget, I made Cheddar Cheese Soup yesterday. OMG!! I didn't do the bacon on top and I want to tell you, was absolutely AWESOME! I'm having it again for lunch today! Now I'll have to try the hash browns. I just made 3 lbs of Turkey burgers & put them up in the freezer. Do you put sun dried tomatoes in yours?...:)JP
