Cheesy Vegetable Chowder

I'm linking this recipe up with "Foodie Friday"


This soup is really delicious. I printed it out from somewhere online but I'm not sure where, so I hope it's not someone's recipe from here in the last couple weeks!

Ingredients:

2 TBSP butter
1/2 C chopped onion
1 C finely chopped carrot
1 stalk finely chopped celery
1-2 cloves of smashed and minced garlic
4 C chicken broth (Best to use low sodium)
2 baking potatoes, peeled and chopped
1 TBSP flour mixed into 1/2 C water
2/3 C milk
2 C chopped broccoli
2 heaping C shredded cheddar cheese

Melt butter in a large pot. Add onions, carrots and celery and saute over medium heat until tender. Add garlic and cook 1-2 additional minutes. Add chicken broth and potatoes, bring to boil and cook until potatoes are tender. Add flour and water mixture and simmer until soup is slightly thickened. Add milk and broccoli and cook until broccoli is just tender and soup is heated through. Stir in cheese, allow to melt and serve.
Yum!
I'll certainly be making this again!

  1. Soup sounds great! I use a recipe off of the Velveeta box for our broccoli cheese soup. Your soup pictures took me down memory lane... these are the plates I grew up with. Thanks for the "happy thought" today.

  3. Oh I would love a bowl of this right now! This is my favorite kinda soup, and yours looks so yummy! After a long day, there's nothing as comforting as some yummy soup!
