Herb Crusted Pork Loin


I'm very late posting this but I'm joining "Foodie Friday"



I made this roast last week in my oven! Yes, not in my crockpot!!!
I got this recipe on line somewhere. I see it says the Food Network. Recipe of Paula Deen.

(Note to self: Get a roasting pan and a rack!)
I followed the recipe exactly and rubbed the olive oil, herbs and garlic with my hands onto the pork loin.

You are to start this out at 475 for 30 minutes. That's a very hot oven!
Mine started to smoke a little from some dripping on the bottom of the stove.
Let me tell you, my pointer, Rocky didn't like that at all. He would make a wonderful fire warning dog! He was shaking and running from me to the back door several times!
So I turned it down to the 425 degrees after about 20 minutes.
Mine was done in less than an hour.

Here it is coming out of the oven.

I had a wonderful sweet potato and some green peas with it.
I could make a meal out of a loaded sweet potato. I love them and they're good for you.
The mandarin oranges were really good with the pork.





I don't normally eat meat but I had to taste this as it smelled wonderful.
